Blueberry Loaf Cake
Ingredients:
2 cups leveled all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar + 1 tablespoon
2 large eggs
1-1/4 cups milk (divided)
1/4 cup unsalted butter (melted)
1/4 cup olive oil
1 teaspoon vanilla extract (or your choice of flavor)
1 cup blueberries
Instructions:
Prep the Dry Ingredients:
Sift together the flour, baking soda, and salt in a medium bowl. Set aside.
Make the Wet Base: Melt the butter in the microwave (about 50 seconds). In a large bowl, mix the melted butter with sugar, olive oil, vanilla, (or your preferred flavor), eggs, and 1/4 cup of milk. Stir well to dissolve the sugar — this is the secret to a moist loaf!
Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture using a spatula. Gently mix while slowly adding the remaining 1 cup of milk until the batter is smooth and well combined.
Fold in Blueberries: Gently fold in the blueberries.
Bake: Pour the batter into a greased or sprayed loaf pan. Bake at 350°F (175°C) for about 60 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Enjoy: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy your moist, delicious blueberry loaf!
