SUMMER FRUIT GALETTE

Celebrate summer with an abundance of fresh nectarines and blueberries. This galette is the ultimate summer dessert.


Ingredients
Crust
2 cups all-purpose flour
1/2 tsp salt
1/4 vegetable shortening
1/4 unsalted butter
1/2 cup cold water
Filling
1 tbsp cornstarch
1-1/2cups blueberries@berrylovers
2 nectarines
2 tsp lemon juice
1 yolk
1 tsp milk
1/2 tbsp coconut sugar

Directions
Crust
In a large bowl, combine flour, unsalted butter, vegetable shortening @crisco shortening and salt. Using a pastry cutter, or fork work in the butter, then shortening until the mixture reaches the consistency of course crumbs.
Drizzle with ice water and mix with a hand or fork until the mixture comes together to form a dough.
Shape dough into a ball, wrap it in plastic wrap and refrigerate until the filling is ready😃. It's a no-fail crust, that firms quickly once you use cold water for the crust👈.
Filling
In a large bowl, gently combine the blueberries and nectarines, lemon juice, and cornstarch. You can add sweetener too! (Optional)Set aside.
Preheat the oven to 350°F. Roll out dough into a 16- inch circle on a board or hard surface.
Transfer dough to parchment paper and place it onto a large baking sheet.
Top with fruit filling, leaving a 2 -an inch border around the edge. Fold up the edge of the dough around the fruit filling.
In a small bowl, mix egg yolk with milk. Brush over the edge of the dough and sprinkle with coconut sugar.
Bake until the galette is golden brown, 35-40mins. Let cool before serving.


Storing
You can store up to 3 days in a wrapped cling wrap and freeze it.
